Myself I've been playing a lot of Space Station 14 (game engine GPLv3, game assets Expat/MIT) that is another great example.
This game accepts contributions and additions from everyone, meaning there's new and fun exciting updates to the game literally every week and that is really keeping me engaged right now.
Sometimes people add completely new game mechanics and complex systems like the salvage job where you can go out on time based expeditions in procedurally generated dungeons, and other times it's small things like someone really wanting to make tacos so they add a taco food item to the game.
