Looks amazing. Dicey, have you had callos a la Madrileña? I tried it once, in Madrid, on a whim, and it was fantastic. Like you said, they stew it for hours so that it's super soft, and the soup is a bit gelatinous. I was told a legend that it was invented during the Crusades, when all the good meats were shipped off with the crusaders, and the townspeople had to eat the leftover tripe.
I love fish and chips too. It's easy to find, for me, since there's a bunch of (overpriced) gastropubs nearby. I rely on it as a dish I know I'll enjoy, and they haven't fucked it up (usually).
I am also a huge sucker for red seafood stews like cioppino. I want to try bouillabaisse at some point but I haven't been able to.
