Yes some servers will let you down, but that's why it's important to use curated lists and not just choose something at random. (I've tried to start my own at https://fedi.garden and there's nothing to stop others doing the same.)

Your suggestion is like saying we should all eat at McDonalds because it has the most consistent standards, and independent restaurants might give you food poisoning.
