@fitheach Sorry - late to your thread. And our reasoning may be different to yours.
We've stuck with xmpp using Conversations (from f-droid) and omemo encryption.
The main reason is it is much easier to self-host using prosody. The last time I checked, there was really only one matrix server, which I found clunky, hard to configure and resource hungry.
We run clients on the laptops (gajim), phones and tablets, and all see the same messages.
Clients are trouble free, with the ease of self-hosting
