"Github" is a service as a software substitute, so it's mostly irrelevant as to what software runs on the servers.
"Github" probably does use mostly free software on their servers, as that respects their freedom.

The question you should be asking is as to why the JavaScript github.com serves is proprietary software.

It's also quite interesting how co-pilot wasn't trained on the source on "microsofts" software, is it almost like co-pilot could be induced to output a mostly identical copy of such source?
