Cattle ranching in Texas has lower overhead than in New York, so it is worth it to the Texan to ship beef away from the hometown market. Eventually the producers and buyers settle into a sort of stasis where prices reflect good margins and what the market will bear. Eventually what was once NY ranch land will be repurposed for something else, and no one will remember NY cattle.
