      @cyanotype I don’t know that authenticity is necessarily the point.

      I think that many places have a tendency to flatten some
      “lower ranked” food cultures and I feel kind of weird about that.

      I’m sure a person who says they’re going to set up a French bistro without knowing anything about French food will get universally laughed at. It’s strange that someone would attempt a far more complex cuisine with such disconnection.

      Anyway, I’m sure they will be successful.

      This article about people in Manchester making American specialties without ever having tasted one hits a similar nerve.

      What do we mean when we talk about authentic food, or an authentic recipe?

      I am *really* interested in there philosophical meaning of authenticity!

      @skinnylatte its easy to make fun of this, but we don’t really know enough about this person to judge. It sounds like they’re very enthusiastic about that style of food and are doing research.

      They were pretty specific about wanting to develop a birria-style taco dish. They might know more than they’re letting on.

      @sysop408 not making fun. Deeply concerned about his repeated lack of interest in actually engaging and learning. Also complete lack of confidence in British takes on Mexican food. (From his repeated comments that he is not interested in going to Mexico, and he’s also said he hasn’t tasted very much)

      I just don’t think that someone who doesn’t know anything about French food will ever feel like they can do a French restaurant.

      @skinnylatte I didn’t see him say he wasn’t interested in eating, but it sure felt like he did because he was just getting roasted by people making fun of him. He actually said he would love to go eat around Mexico if he could.
