i actually believe that study from anecdotal personal experiences. people who drink black coffee and pretend to dislike sweet things are always awfully unpleasant to be around.
also because of their addiction and because of the persona they want to present, they delude themselves into thinking black coffee is "sweet" because of their superior beans, roasting, and brewing methods or whatever else. this is no different from from the cigarette addict who prefers one brand's blend of pesticides and firesafe chemicals over another, when even if one cigarette tastes better than the other, it doesn't change the fact that all cigarettes taste bad; and it doesn't change that they would settle for the inferior coffee or cigarette if they had to

@s I enjoy the misery of bitter, black coffee. It properly prepares you for the workday ahead.

@s I genuinely do not like like my coffee being sweet. That is not the same as being bitter, I do use milk.

@s But I do agree pretending not to like something is kinda silly, like coffee goes well with pie and cake as the sweetness of those is offset by the coffee. To make another comparison would be punch and cake. The punch is already sweet being mostly soda, and as such the sugars sweetness from the punch overwhelms that of the cakes sweetness.

If I want sweet and coffee flavors together I'll eat coffee ice cream.
