There many non-lethal options you can use against someone who has a gun. Like electroshock weapons, tear gas.
   You can't fight fire without fireAlso I never see countries do this but I honestly think police should be using tranquilizers or sedatives maybe?

     Police should be keeping public order and handing out traffic tickets and shit like that. They don't need a fucking gun lmao

     Unfortunately, a firearm is faster than either of those.

     Tranquilizers and sedatives take 15 minutes to work, are quite risky and can have no effect depending what drug the target is on.
     
     There are more powerful drugs that will work as a tranquilizer or sedative in seconds (assuming no counteracting drugs), but the target will die unless an antidote is immediately competently delivered afterwards.
     
     When it comes to grannies with knifes as the like, there is no need for a firearm or electroshock weapons, you just grab the knife off granny (utilizing a stab vest or net if you're hopeless).
