Eh... isn't Avocado considered a fruit? And that's pretty common in Sushi.

@FeralRobots @RickiTarr I did a reverse-image search and of the websites that turned up, were still functional, and weren't imgur, I found a tumblr blog for someone's 70s food book, which is not a cookbook but just photos of food and some sarcasm. It's *possible* this was made at one point but I think the origin is lost if it was. Given that the book wasn't well-researched, I doubt the photo was staged, though.
That strand is banana skin, though, rather than parsley stem.

it it weird that I'm hung up on the fact that the parsley is all dried out? & that's before I get to the long trailing big of dessicated parsley stem on the left side of the one second from bottom.
...also what is that sauce? It looks like some kind of dijon salad dressing.
This one really does look like trolling to me. Are we absolutely sure it's period & sincere?
@FeralRobots @RickiTarr I can totally get being bugged by it. But the photo itself is very much on-style for the standards of 1970s food photography. My partner has a complete Betty Crocker recipe card box set from that era, and they all look like that. A quick example:

That string thing was really bugging me, not gonna lie. It does seem to me to argue that whoever took that photo was not good at photographing food.
