Living part time in a way less SE Asian town than my SF neighborhood means I have to use Trader Joe’s coconut milk.
Not ideal, but at least it exists. (The good market with the ‘ethnic’ brands I prefer is 8 miles away in another city)
Whenever I can, I use Chef’s Choice and Aroy D for coconut milk. Kara for Malaysian dishes if I find them but they are far less common over here.
Of course every time I use coconut milk out of a can I’m annoyed I don’t have fresh ones. Bring some coconuts to a guy in a market, and have him cut it and make the coconut milk on the spot.
