Can confirm. I'm in the supply and logistics side. Vegetables and fruits are picked before they're ripe and bulk loaded into trailers. It gets shipped to massive cold storage facilities where it's sorted and packaged. Before it gets shipped out they have "gas chambers" that they use to accelerate the ripening process. You're now at about 3 weeks from when we got it, but each type of food stuff can be "suspended" using refrigeration.
Even those roadside fruit stands, 80% are resalers not producers
