vv221 (vv221@fediverse.dotslashplay.it)'s status on Thursday, 18-Jan-2024 21:43:05 JST vv221 Long time user of the Debian-provided GitLab packages here, I tend to see this as the only sane method to self-host GitLab.
While I am ready to trust GitLab Inc. for the development and the maintenance of GitLab itself, I would rather put my trust into Debian maintainers for all the other software that comes with it: PostgreSQL, nginx, the gazillion Ruby and JavaScript libraries, etc.

It is a good way to start contributing to debian as rebuilding is usually very simple.
I'd be happy to help if you are interested to join the effort.
We have to do this once in a month or two months usually.
