I need to do some research about the directors and co-directors because I've never seen such visual poetry in a k-drama before.

If the episode about the sick child is any indication, it is possible that one of Do Do-Hee's parent made a deal to save her from some sickness. That car accident was no doubt the 10th year of the contract and was collection day.
However, what I can't remember is if it was hinted before that both of her parents died at the same time. And I don't recall there was a collection day wherein another person died other than the one who made the contract.
If both of her parents died during that car accident, maybe the spouse died first and the one who made the contract still had a chance to live. Unfortunately, for that person, it happens to be collection day.
I think that way it is possible. It was a car accident that Jung Koo Won had nothing to do about. After all, he can just induce a heart failure by visiting them anytime and anywhere; he doesn't need to orchestrate a car accident.
If that parent did not make a contract, s/he would have lived after the car crash, only his/her spouse would've died that night. (Assuming all other variables remained the same.)

The person who signs the contract dies - so it either had to be her mom or dad or both?? Wasn't she about 10 when they died? Could it have been something to do with having a child or healing a sick child?
& I'm still stuck on "Ju" being a name for Jesus & the references to her son being the spawn of the devil.

@s1m0n4 so I thought he made a deal with Do Hee’s dad who would have had a heart attack and crashed the car. But Ju was there. He went to see her that day I’m curious about more of the backstory.

@EllenInEdmonton oh that could be possible. However Do-Hee's mother would have been an additional victim if the dad had an heart attack while driving. One of the rules of the demon manual is that a demon can't kill humans he hasn't signed a contract with. And a demon can't interfere with God either.

So M.me Ju signed a contract with Gu-Won but more than the usual 10 years passed since the car incident until her death.
And Gu-Won didn't collect the soul. Something fishy is going on there, did God intervene? Will God ever have any active role in this drama? And why is she good exactly?

This is basically what happened. He became a demon, forgetting who he was, but when he met her again he couldn't just treat her as another "insignificant human"™
The important thing is that Gu-Won didn't kill Wolsim directly, his father did. Now I hope we see how he became a demon.
And hopefully Go(o)d will prove a little more powerful, she's frankly quite disappointing as God

I just realised and started to wonder how Do-Hee will react once he learns Gu-Won made a contract with her father. And will it be the equivalent of “fate repeating itself”? Instead of Do-Hee, her father “paid” it?
The next 3 or 4 episodes is going to be painful. T_T

I've re-watched the final frames and you're right in thinking that Do-Hee's dad was the collected soul.
Nevertheless that incident has been caused by Seok-min, not Gu-won. We saw M.me Ju getting angry at her son for killing people in a car incident and that's also when she said to him "you're truly the devil".
So the most likely hypothesis is that coincidentally the contract time was up that day and Gu-Won just ended it.

I bet M. Ju was going to leave the company to Do Hee's dad as co-founder because she didn't like any of her children.

The length of one's life is not exactly part of the contract. The deal has always been, he'll take their soul to hell after 10 years. There was no provision that he'll make sure they'll live for 10 years (unless that's the exact "wish").
And sticking to the "demon" theme, it would be expected that the contract is one-sided. If the demon expires, whatever he gave them will revert or stop (like the sick child). But if they die early, their soul is still his to take.
In that scene, he probably said something like, "You're about to die even though you still have a few years, I'll take your soul now." ^_^;;
