@pseudomonas @davidallengreen This is the recipe I started from, but pretty much everything is possible to alter (I never use almonds, for /reasons/), and go heavy on the ginger because I love ginger.

Also in some sources you can find versions that go half-and-half or even fully replace the wheat flour with rye flour. IDK if that makes them suitable for gluten-free/wheat allergy people (ask @goatsarah about that I guess)

@A_C_McGregor @davidallengreen @goatsarah I keep meaning to make speculoos (the sort with just cinnamon); I find it a bit less cloying than speculaas or Spekulatius. But I might have a go at this recipe if it has your seal of approval. Maybe just dialling back the sugar a touch compared to commercial stuff would be enough for my taste.
