If you like working with LaTex, maybe have a look at Overleaf.
While there is a hosted, pay-to-use version which is convenient, there's also an open source Community Edition for self hosting purposes:
If I was to write a technical paper or text book, I’d probably consider Overleaf. Not sure if it’s something that’d assist for a work of prose.
I’m far from a LaTeX expert, but in my limited experience Overleaf provided a better editing experience by abstracting away the LaTeX markup, but it was still available in a specific view.
When I’ve used LaTeX tools locally before, this has always been a bit messy, with markup visible during editing. Maybe I was just using the wrong tools.
Overleaf also has the accessible from anywhere online and collaborative aspects, if that’s important to you.
