Most e-ink screens that I know of require require proprietary software to display to the screen.
You can reportably install BusyBox/Linux onto certain Kobo's now, but I'm not sure how proprietary it is.
Pine64 has also released a ebook reader, but it's very expensive and extremely proprietary.
You can get whole e-ink computer monitors that you just plug HDMI into, but those are extremely expensive. -
