When I open a cheese for the first time, it's too wet. I've just done it with two different cheeses, a grana and a parmesan, and it happened both times. If I leave them in the fridge, with the packet open now, for a day or two, they will be drier, harder, and more flavourful. Why is this? Someone explain. Are you supposed to do this before eating it?

@CatLord @graf It's because the packaging you buy it in is non breathable and usually plastic so the water vapour released during the process of the cheese maturing is trapped in the packaging and not able to evaporate. Sometimes it's liquid whey or fatty acids, depends on the cheese. Luv me cheese 🥰
