- Get a nice oily, spicy sausage (e.g. kielbasa, chorizo, merguez)
- Remove casing, form small meatballs
- Pan fry meatballs w/a little extra oil if needed
- Remove meatballs but leave oil in pan
- Soften thin-sliced onions in oil, add garlic
- Blanch kale in salted water
- Toss kale in pan, heat until water cooks off
- Add sausage back, let flavors mingle

there is a german soup, which is basically spicy sausage, potatoes, and kale, which has become a staple winter lunch at our house.
you put enough other stuff in to cover the taste and kale isn't so bad. ;)
