The yeast from the air lands on the water and starts to eat the sugars and fermentation begins. First it becomes alcohol and then it become vinegar.
The process should take around 30 days.
I put to many in and had to take some of the dehydrated apples out as they took up too much space once they rehydrated. I added extra water today to compensate.

Vinegar is just wine that's been left out open to the air.What is supposed to happen is the yeast from the air will fall on the water and the yeast will begin to eat the sugar from the apples, starting fermentation. First it becomes alcohol and as it's left to the open air, it will eventually become vinegar.
Vinegar was discovered by leaving open wine barrels exposed to the air.
