   Well #today I have nothing to do other then bake one of the loaves of sourdough I have fermenting in the fridge. I'm not sure how it will turn out since I probably over fermented it because of #adhd distracting me.

   Other then that it's just going to be a chill day today.

     It is sunny and 5C, and 80% of the snow has melted. ❄➡? Plus birds are returning and talking about their #favorite #travelsnack, which turns out to be #sourdough.???

     @Mrfunkedude made my first sourdough loaf today from my home made starter (est 24th Jan 2023). It's now proving in the airing cupboard and I'll bake it in the morning. #sourdough Keeping my finger's crossed for a decent outcome.

     @Mrfunkedude so here's the loaf I baked. Not too bad although I think the crumb is too dense. Serves me right, the starter failed the float test so probably wasn't ready. #sourdough

     @Bresserphotos yep. It looks like you're probably right.

     The best time to use starter is right before it collapses from it's feeding.

     I like to create a pre-ferment the night before. If I'm making two loaves I'll mix 30 grams of starter with 90 grams of flour and 90 grams of water and use it the next morning to add to the rest of the flour and water and salt to make my loaves. It works really well and adds a bit more flavor.
