On strict fast days, I just eat bread, dried fruit, nuts mostly. I will also just have various fancy wild rice blends with soya sauce. But I generally don't have to prepare food for others or children.
I do have a cookbook, but for the xerophagy days it's mostly salads with no oil or vegetables or starches cooked without oil.
In Slavic traditions, the no oil proscription extend to all oils, not just olive oil. Strictly speaking it should only be bread or other grains, fruit, nuts and vegetables cooked with salt and water. But in practice shellfish are often had, and in Greek churches vegetable oil other than olive oils are used. Other people in your Church should have ideas as well.
