as long as room temperature isn't below freezing, it works
the difficulty is from getting your starter going to begin with
mine is 3 months old, i keep her in the fridge, because of the lower temperature the yeast takes longer to eat, meaning instead of feeding it once a day, i feed it ~1 a week
also not even sub zero cold kills the yeast, they just become inactive

they heat up when lit and are usually enough to keep your sourdough at a comfortable temperature

everything affects cheese making, from the species of grass the cows to the bacteria that are around in the air (and in caves in the case of blue cheese)
