@Sophistifunk I pseudo pickled this beets this past weekend. Here is what I used. I didn't do a proper heat and pressure canning for long-term. I just put up enough to last 7-10 days . This method also works great for that. Only changes I made was 1/2 the sugar and pink salt instead of pickling salt. My sister brought these to me on Saturday. I have pretty good sized hands. She knows the people who grow them and she is welcome to as many as she wants. They're going to tell her how it's done. They also grow cabbage the size of basketballs. #beet it
