Like there is farming, combat, puzzles, etc. If so probably the best way to start is to make smaller games with only part of your vision of the game. Make those fun and release them. That can build fan base which might allow you to find collaborators. Another option is build a boardgame. Paper prototypes to prove a game is fun is a good idea and can be demoed to people. As others said I wouldn't worry about people stealing your idea.
