Because staying in space means speeding up horizontally to like 15000mph, so the 100 miles you actually have to go up is too miniscule a portion of the requirement to actually justify the complexity.
It's also why rocket launch sites don't try to be on mountains and why launching rockets from planes has remained uncompetitive.
