That's the other thing. You can shed your anonymous identity, but you will still have the same desires, basic facts, interests, beliefs, mannerisms, idiosyncrasies, etc that will all come out as you communicate under your new identity. You would have to constantly and vigorously lie and deny yourself to remove what can easily be seen as you with new mask. That will only immiserate your time on the Fedi. I could never do that.
If someone wants to dox you, they probably already have been collecting your information, your posts, your profile settings, and the like. Shedding your info won't delete what your enemies already have.
This is beside that the various government agencies may have already collected and profiled our personal and Fedi information for being on that "anti-Semitic and anti-government" part of the Fediverse. If you shed your identity completely, they can still identify you through things like language analysis, made easier via machine learning, or fingerprinting.
You should consider this while thinking about an instance and idenity change.
