This is a good point. Cinnamon (de facto recommended Linux Mint GUI), KDE Plasma, and MATE are more Windows-like, while most twists on Gnome 3 (including Pop!_OS's) are a bit more macOS-esq.
There are a lot of customisation options for all of them, but this is speaking in terms of "install this and then tinker with it as little as possible".
Again, the live distros are a great way of getting a feel for what you like/hate/tolerate.
