ugh, this is a tricky case if the distro doesn't have support for all of multi-device root, luks, and multi-device btrfs. as an early adopter of btrfs, I felt that pain before distros gained support for multi-device roots. three paths to try occur to me:
1. use an initramfs generated by a different distro that supports these all, running exactly the same kernel, adjusting only the subvol mounted as root so that it boots the desired system
2. post-processing the initramfs generated by gentoo to enable additional root device components to be brought up
3. adjust the initramfs generator to that end. if it supports at least two of these features, it shouldn't be hard to extend it to go the extra mile
unfortunately, initramfs and generators are quite distro-specific, and I'm not at all familiar with gentoo to offer any specifics
