Hams were originally created by curing to be shelf-stable, so theoretically they could last a while too. Cheese is the same; if it was salted properly during the process, it could last until mold gets it.
It all comes down to the mayo, really. Vinegary mustard or dill relish might make it. Properly made mayo won't make it.
