We grow a lot of rice in the USA, although nothing compared to corn and soy due to subsidizing. This dude is doing "upland rice" where you sprout it in a very wet area and then move it to a standard cereal crop style growth. You have to weed it like crazy because rice is a grass and will get choked out by other plants. You get much higher yield per plant with far less heavy metals or other issues associated with root rot common in flood growth rice.
