I was thinking yesterday while setting up my mum's new iPhone, if that was my first time typing on a touchscreen and I didn't know any better, I'd probably give up to it and just use the dictation function like I see a lot do. It really is a horrible experience typing with VoiceOver in its default state.
There's literally no information during setup or even in settings to tell you what the various typing modes mean, or even how to choose one. When I started to use voiceover in late 2009 not long after it was first released, there was just "standard typing mode", not even any dictation so I just had to put up with it, and it was annoying. Then "Touch typing mode" came out sometime in 2010. There's still no built-in VoiceOver tutorial or any help at all apart from the VoiceOver practice function, and that's just like keyboard help mode in any other screen reader. That's another kettle of fish entirely though.
