The only e-ink devices that can trivially run GNU/Linux I know of are certain Kobo's and Pine64's PineNote - too bad the Wi-Fi cards run proprietary software.
It is possible to port GNU/Linux to those Android tablets, although it'd be a real pain in the neck as you either need to find which drivers work with the hardware or even potentially write drivers yourself (many Android device manufacturers seem to be opting to write and run proprietary drivers in userspace, rather than just writing a Linux module and releasing it under GPLv2 compatible terms as required or better mainlining them).
The only screens larger than drawing tablets that are available seem to be desktop monitor size and e-ink desktop monitors certainly aren't cheap.
