      回転寿司の普及は、長きにわたる日本の寿司文化を劇的に変えた。マグロと並ぶ回転寿司の「二枚看板」といえば、子供にも大人気のサーモンだろう。寿司ネタとしては邪道と見る向きも依然としてあるが、日本に上陸したノルウェーサーモンは瞬く間に我々の食文化の一部となった。このウラには「仕掛け人」の存在がある。
