A very improvised dinner tonight with what was on hand. A bowl with:
- Pearl barley
- A mixture of acorn squash, sweet potato, beetroot, spring onion, and garlic with some cumin, chili flakes, and turmeric
- Falafels made in an appam pan
- A smidge of feta.
We are tentatively calling it "Autumn Half-Moon Buddha Bowl" (vegan without the feta) 🤗
