I have made my own taco seasoning for a while, but I still like using store bought sometimes. A good trick to make blackened chicken for a salad or quesadilla is fresh lime juice and enough heat to sear it to the surface. Sometimes I'll do that first to seal in the juices and then pressure cook or bake pan fry depending. Rice is just like making a pilaf except you add in tomato paste mixed in water for the cook down, or raw tomatoes if you have the ingredients. Things aren't as fancy as they seem, it's just simple techniques.
