You can delete the pixelfed.de account and it won't affect the mastodon.social account at all. They're on different servers so they are totally separate accounts.

Pixelfed.social is very large so it does occasionally close itself to new members. I don't know how long it will be closed for.

The best thing is to just join a smaller server, because the servers do still talk to each other so it doesn't really matter if you're on a smaller server. Some people are on their own server with no other members at all, but they still get followers!
