I don't think the Atlanta restaurants would fly in NYC. New Yorkers will accept a long wait, but the variability is unforgivable. They will tolerate a *consistent and predictable* 45 minute wait for dim sum, or halal guys, or ramen, or Pho. But if they were expecting a 15-minute wait and it takes 45 due to a mistake? Problems. NYC sized problems.
I think customer pressure, combined with high commercial real estate prices, would make these restaurants financially non-viable in NYC.
