The best dim sum restaurants I've been to, and the best ramen restaurants I've been to, have "bad" service. There's a long wait, they're crowded, and once seated they try to get you to eat fast so that they can rush you out and turn your table over for the next guest. 🤷🏿♂️
This is fine because the customers of those restaurants select for food taste, and plan their meal around the longer wait. The restaurants make money. As customers we don't select for "French Laundry" calibre service or ambience
