I've been considering a less invasive method recently, some WiFi access points (like a TP-Link TL-WA1201) can be used in a "client mode" effectively making them a very high gain WiFi adapter that can then be plugged into a network switch to provide multiple Ethernet connections to an area, assuming very fast Ethernet like 10Gbit isn't required this avoids the need to wire the house/building.
