Each server has its own view of the Fediverse (more info: https://fedi.tips/which-posts-and-accounts-can-i-see-from-my-server/) which also affects which likes and boosts it sees.

Also it can take time for servers to update their stats about accounts and posts. It's ultimately not that important to see these numbers being constnatly up to date.
