I recently found out one more reason i love #fermentation ❤️ so much!
It's one of the rare activities i have that is (delicious and healthy and) a modest, but very real *projection in some future*: "In one week the sauerkraut will be ready.. then such veggies in brine.. Such jar can stay there for months.. I will have enough gurken for months!.." etc. ?️
It's very comforting, calming somehow to have such elements in one's life, a bit like when planting a seed and caring for its becoming. ?
