You can put any 2.5 size SATA SSD in and it'll work - even a 4TB one, as there are no arbitrary size limitations.
You can also install a NVMe SSD via an expresscard or a mPCIe adaptor, but it seems a SATA Link is faster than a 1x PCIe 1.0(?) link.
Most ThinkPads come with 3 USB ports, but the X200{t,s,} dock adds another 4 usb ports.
