Michael Potter@Natasha_Jay I was once forced to alter the recipe from Thai eggplant because I was shopping at a 24-hour Texas Wal-mart, and I found that red sweet peppers and broccoli make a good substitute for the eggplant and go well with the chicken.
It's too bad the best coconut milk seems to involve monkey slavery, but I'm content using other brands.
