      @Ryuken_san Well, I think natural tuna is better as sashimi than sushi because it is very fatty.

      @Ryuken_san That's right. The one in the front is "O-toro," and the one in the back is "Akami." Japanese people call different parts of tuna by other names. O-toro" contains especially much fat and has a rich flavor.

      @toneji Oh I see! I suppose the quality of the fish plays a great part in the final taste of a sashimi, more than a sushi ?.

      In the picture you posted, there seems to be two different kinds of tuna, but actually it's just two different parts of the same fish, right?

      @Ryuken_san I see. O-toro is the name of the belly of the tuna. It is expensive because not that much can be taken from one tuna. On the other hand, it contains a lot of fat and has a rich flavor, so I think it tastes better when eaten alone, not combined with other food items.
      Akami is the meat in the center of the tuna. Unlike its appearance, it has less fat and is healthier. This may be the reason why it is often used in French dishes.

      @toneji I've heard about "O-toro" a lot of times, but unfortunately I've never had the chance to taste it....

      In France, the sushi/sashimi served in restaurants never include it. It just states "tuna" on the menu, and it always look like "Akami"
