今年の仕事の山は何とか乗り越えたので、こんな時間だけど、天然まぐろの刺身で独り乾杯している。

The one in the front is "O-toro," and the one in the back is "Akami." Japanese people call different parts of tuna by other names. O-toro" contains especially much fat and has a rich flavor.

In the picture you posted, there seems to be two different kinds of tuna, but actually it's just two different parts of the same fish, right?

とねぢ @Minoh-don(piano.piano) (toneji@minohdon.jp)'s status on Saturday, 24-Dec-2022 04:50:43 JST とねぢ @Minoh-don(piano.piano) @Ryuken_san I see. O-toro is the name of the belly of the tuna. It is expensive because not that much can be taken from one tuna. On the other hand, it contains a lot of fat and has a rich flavor, so I think it tastes better when eaten alone, not combined with other food items.
Akami is the meat in the center of the tuna. Unlike its appearance, it has less fat and is healthier. This may be the reason why it is often used in French dishes. -

In France, the sushi/sashimi served in restaurants never include it. It just states "tuna" on the menu, and it always look like "Akami"
