Ok. Having a Pihole and Google Wifi might not be the best combination.

My Pihole died -> Google Wifi router no longer connects as it no longer has a DNS -> not possible to change any settings as it seems to need a cloud connection to change it...

I just spent 2 hours resetting everything to get my wifi back online.

Yeah, if I had the money, I'd switch away from Google. But I have a full mesh of Google Wifi devices. Switching and throwing our funcitonal stuff doesn't feel right.
