@matrix You cannot really fuck up a chicken... Don't hose it down with washing liquid, nor bleach, nor chlorine. Add some herbs, butter, whatever. Chuck it in the machine and enjoy.

I absolutely disagree. I had way too much of an undercooked chicken from many cooks to know, that the raw taste is really disgusting. I have also had a lot of bland tasteless chicken too. And I honestly am lost at how to draw out the great taste at this point. -

@LukeAlmighty @xyfdi @matrix First you go fast then you go slow, give it a sear and then slowly raise the internal temperature to somewhere in the middle 60s (celsius) and keep it there for a few.
The taste will still be mostly the crust though, the meat itself will just be juicy.LukeAlmighty 🇨🇿 likes this. -

@LukeAlmighty @xyfdi definitely, i had chicken thighs last week in a fairly fancy restaurant (for 16€) and they were pretty dry and bland
