You can add the FUTO F-Droid repository to get their speech-to-text keyboard (it's not technically FOSS since they have a commercial use restriction, but it's good if you're okay with that).
OSMAnd maps works. HERE maps isn't FOSS, but it works without google services.
I don't run GApps or microG and this is my list of what I use:
2025 is coming and I still miss on my smartphone: - location service (faster than gps and working in cities) - text to speech (to drive) - speech to text (to remote command or write)
Am I the only one in need? (Without relying on GAFAM of course) I'm surprised considering all the use cases (many industrial applications could benefit of that)
