I'm wondering why a handle, specifically, and am speculating that perhaps it's specifically to mix more slowly, possibly to create this specific effect. It came almost out of nowhere for me, even though I could see it once it started to happen. (It's a _very_ quick changeover.)
At that point, it's not really something you can mix anymore, including with a handle. So you kind of have to stop - and maybe that's why, instead. Maybe using a handle keeps you from overbeating the dough. I don't know.

Now, what was I saying about the mixing?
Yes. It's an odd combination. It goes from powder and very separate to a slow aggregation of large lumps in centre and very small droplets of dry dough balls on the outside, even stirring around the edge specifically to combine.
But as you keep at it - particularly with some cross-bowl mixing - you see it start to become more of an aggregate, and then it _very quickly and suddenly_ jells together into a heavy, thick combined dough. The transition is startlingly quick once it starts.
