I bought idly mix and made some idly and learned some interesting things:
1. Idly mix is great. Just add milk and yogurt and it’s ready to steam in 5 minutes
2. There’s a good reason idly are the shape they are. If you make them fatter, they stay gooey in the middle
3. I should have thought about getting/making some of the dipping sauces, heh
4. There are special idly making forms which are probably a good idea because see 2
But most important is that it’s very little hassle to make idly at home (once I get the forms it’ll be almost as easy as toaster waffles) and I need no longer moan that you can hardly ever get them in San Francisco
