    I bought idly mix and made some idly and learned some interesting things:
    1. Idly mix is great. Just add milk and yogurt and it’s ready to steam in 5 minutes
    2. There’s a good reason idly are the shape they are. If you make them fatter, they stay gooey in the middle
    3. I should have thought about getting/making some of the dipping sauces, heh
    4. There are special idly making forms which are probably a good idea because see 2

    But most important is that it’s very little hassle to make idly at home (once I get the forms it’ll be almost as easy as toaster waffles) and I need no longer moan that you can hardly ever get them in San Francisco

      Idly are a wonderful breakfast food but there’s no rule you can only have them at breakfast. I did have them almost every breakfast last time I was at Bangalore, until the hotel staff approached me and suggested I might also want to try dosa as well :)

      The thing is you can get dosa in SF wheras idly is harder. But now I maybe see why they don’t sell idly so much. If you want them, they are very easy to make. A dosa is such a big and delicate item OTOH a lot more skill is surely involved. Or at least special equipment. I assume. I have not yet tried making dosa. I can barely manage naleśniki, which is the Polish version of crepes, and I’ve been making those since I was a kid.
